The champagne cooperative Union Champagne was founded in Avize in 1966 by the merger of six small champagne producers, today the cooperative has 1,860 members, who own most of the Grand Cru vineyards in the villages of Avize, Cramant, Oger, Le Mesnil sur Oger, Ambonnay, Bouzy and Aÿ and 1er Cru in the villages of Vertus, Bergères les Vertus and Cumières. With a fine dense bubble stream, crystalline in color, pale golden yellow The aroma is elegantly complex, silky, white aromatic flowers with peaches, nectarines and citrus fruits. Marzipan, ripe baked apples and toasted bread are added to the finish of the aroma, balanced by silky citrus freshness. The taste is full mineral and fruity, when the taste opens you can feel yellow fruits, light stone fruits, apricot and ripe citrus. The aftertaste is well-balanced, long and toasty fruity, complemented by brioche and a light toasted almond nuance. The grapes are picked from various vineyards in the Côte des Blancs area classified as Grand Cru. Only the Baa wine made from the first press is fermented in stainless steel barrels, 23% of the wine is without malolactic fermentation, the second fermentation/autolysis in the bottle with yeast vinegar lasts 5-6 years.
