The champagne cooperative Union Champagne was founded in Avize in 1966 by the merger of six small champagne producers, today the cooperative has 1,860 members, who own most of the Grand Cru vineyards in the villages of Avize, Cramant, Oger, Le Mesnil sur Oger, Ambonnay, Bouzy and Aÿ and 1er Cru in the villages of Vertus, Bergères les Vertus and Cumières. With a fine dense bubble stream, crystalline in color, pale golden yellow The aroma is citrusy, fresh and fruity, you can also feel white aromatic flowers with ripe light stone fruits. The aroma ends with slightly overripe apples, biscuit and toasted bread, balanced by silky citrus freshness. The taste is dry, vividly mineral and fruity, with yellow plums, apples, light stone fruits and fresh citrus as the palate opens. The aftertaste is well balanced, long and fruity, complemented by a note of light toasted bread and cookies. Only the wine made from the first press is fermented in stainless steel barrels, 40% of the champagne mixture uses reserve wines from older vintages, and 8% of the wine is not malolactically fermented. The second fermentation and autolysis in the bottle on lees lasts for 36 months.
