The champagne cooperative Union Champagne was founded in Avize in 1966 by the merger of six small champagne producers, today the cooperative has 1,860 members, who own most of the Grand Cru vineyards in the villages of Avize, Cramant, Oger, Le Mesnil sur Oger, Ambonnay, Bouzy and Aÿ and 1er Cru in the villages of Vertus, Bergères les Vertus and Cumières. With a fine dense bubble jet, clear and bright yellow in color, with a slight golden undertone The aroma is minerally fresh and fruity, you can feel red apples, nectarines and fresh light stone fruits. The end of the aroma adds some dried apples, almonds and toasted bread, which is balanced by mineral citrus freshness. The taste is vividly mineral and fruity, as the taste opens you can feel apples, light stone fruits and fresh citrus. The aftertaste is well balanced, long and fruity, complemented by a light toasted almond flavor note. Only the wine made from the first press is fermented in stainless steel barrels, the second fermentation and autolysis lasts 60 months in the bottle
