Appassinero wine is a blend of the two most important grape varieties of the Puglia region of southern Italy - Primitivo and Negroamaro. Both varieties reflect Puglia's warm climate and fertile soil, offering intensely full and juicy berry flavors. In wine production, the appassimento method is used, during which the berries are left to dry on the vine after ripening. As a result, the wine has a more concentrated and rich flavor profile, offering ripe fruit nuances such as blackberries, raspberries and strawberries.
