Since 1997, the winemaker has been Jean Marc's son Julien, who is a pioneer of organic and biodynamic berry growing in the Chablis region. At the same time, he established an 11ha wine estate called "La Boissonneuse", where the vines are cultivated from the beginning following organic-biodynamic farming practices. - Certified Organic Culture by Ecocert / Certified Biodynamic Culture by DEMETER. In color, pale yellow with a greenish sheen. The aroma is subtle, fresh, intensely creamy. There are ripe yellow apples, algae, wet stone and chalk, a hint of spiciness with light stone fruits. The end of the aroma is minerally citrus. The taste is medium-bodied, ripe fruity and fresh with bright citrus acid. Feel yellow apples, peaches with the bitterness of lemon peel. The aftertaste is long, minerally pungent and with bright citrus acid. The grapes are grown following organic-biodynamic farming practices in a vineyard called "La Boissonneuse" belonging to Julien Brocard. The wine is fermented in stainless steel vats, is malolactically fermented and develops for some time on lees (sur lie) in large neutral oak barrels.
