The white grapes are hand-harvested in the early morning and immediately cooled to preserve their freshness and aromatic purity. The following day, the grapes are gently pressed at low temperature and the juice is transferred to tanks for fermentation. Fermentation is completed in oak barrels, where the wine matures on fine lees until spring. Regular bâtonnage enhances roundness, texture and complexity. Before bottling, the different lots are carefully tasted, blended and assembled into the final cuvée.
