A successful collaborative project of Les Celliers Jean D'Alibert, the first "flying winemaker" Hugh Ryman, wine critic & journalist Robert Joseph, and designer Kevin Shaw of the Pépieux berry growers' cooperative in the Minervois region. The color of the wine is below average intensity, pale yellow with a slightly greenish undertone. The aroma is fresh and fruity. Feel a little white flowers, fresh yellow fruits and yellow apples. The end of the aroma is complemented by fresh citrus fruits. The taste is dry, lighter and fruity fresh. Feel fresh light stone fruits, apples and pears and fresh citrus fruits. The aftertaste is medium length, citrusy lively and fruity. The grapes are picked from limestone-clay fields in the Minervois and Carcasonne regions. The wine is fermented in temperature-controlled stainless steel barrels and does not develop in oak barrels.
