A successful collaborative project of Les Celliers Jean D'Alibert, the first "flying winemaker" Hugh Ryman, wine critic & journalist Robert Joseph, and designer Kevin Shaw of the Pépieux berry growers' cooperative in the Minervois region. Medium intensity ruby red with a slight violet undertone Aromas of ripe red berries, dark stone fruits and black currants, with slightly peppery notes along with lightly roasted coffee beans. The taste is medium-bodied, dry and juicy berry. You can smell ripe dark wild berries, black currants and wild berries, dark stone fruits and a little blushing blackberry. The medium length aftertaste is enhanced by a pleasant and velvety berry park. The berries come from the areas of Carcassonne and Minervois and are grown following the principles of sustainable farming, the wine is fermented by the berry varieties in separate stainless steel barrels and develops for a short time in large oak barrels.
