A successful collaborative project of Les Celliers Jean D'Alibert, the first "flying winemaker" Hugh Ryman, wine critic & journalist Robert Joseph, and designer Kevin Shaw of the Pépieux berry growers' cooperative in the Minervois region. The color is intense purple-red, with a slight violet-purple undertone. In the aroma, you can feel lilacs, dark stone fruits and ripe black forest berries, with slightly spicy peppery nuances. The taste is dry, medium-bodied, juicy berry-blueberry. You can smell dark stone fruits, plums and a little pepper. ´The medium length aftertaste is complemented by a pleasant and velvety berry park. The berries are picked from 20-year-old vines in the Minervois and Carcassonne areas, the wine is fermented in stainless steel barrels, and 20% of the wine is aged for 3-6 months in French and American white oak barrels.
