A successful collaborative project of Les Celliers Jean D'Alibert, the first "flying winemaker" Hugh Ryman, wine critic & journalist Robert Joseph, and designer Kevin Shaw of the Pépieux berry growers' cooperative in the Minervois region. The color is pale yellow with a lower than average intensity, slightly greenish undertone. The aroma of the wine is floral and perfumey. Feel white flowers, lilac, lily, overripe yellow sweet tropical fruits, mango, pineapple and sweet citrus. The taste is lighter and sweet, intensely fruity. Feel ripe tropical fruits, overripe pineapple, mango, ripe apricots and peach jam. The aftertaste is fruity, long and lush with a light almond note The grapes are picked from the Rousillion areas in the South of France. The wine is fermented in temperature-controlled stainless steel barrels, kept on yeast for 6 months after fermentation, and does not develop in oak barrels.
