A successful collaborative project of Les Celliers Jean D'Alibert, the first "flying winemaker" Hugh Ryman, wine critic & journalist Robert Joseph, and designer Kevin Shaw of the Pépieux berry growers' cooperative in the Minervois region. The color is pale yellow with a low intensity, greenish undertone The aroma is piquant and aromatic, with hints of grassiness, fresh herbs, nettles, green apples and rhubarb, plus lime, green gooseberries and fresh citrus fruits. The taste is light and dry, with bright citrus fruitiness. Feel passion fruit, green apples, rhubarb, fresh asparagus and bright citrus with fresh herbs. The aftertaste is long and grassy and fruity. The wine is fermented in stainless steel barrels and is not aged in oak barrels.
