A successful collaborative project of Les Celliers Jean D'Alibert, the first "flying winemaker" Hugh Ryman, wine critic & journalist Robert Joseph, and designer Kevin Shaw of the Pépieux berry growers' cooperative in the Minervois region. The color is pale yellow with a lower than average intensity, slightly greenish undertone. The aroma is fresh and fruity. Feel some exotic white flowers, ripe yellow fruits, some pineapple and yellow apples. The end of the aroma is refreshed by aromatic citrus freshness and ethereal aromas of citrus peels. The taste is dry, medium-bodied and complexly fruity. Feel ripe tropical fruits, overripe light stone fruits and citrus fruits with fresh herbs. The aftertaste is creamy fruity with a balanced citrus acid finish. The grapes are picked from limestone-clay fields in the Minervois and Carcasonne regions. The wine is not malolactically fermented and is not aged in oak barrels.
