A successful collaborative project of Les Celliers Jean D'Alibert, the first "flying winemaker" Hugh Ryman, wine critic & journalist Robert Joseph, and designer Kevin Shaw of the Pépieux berry growers' cooperative in the Minervois region. The color of the wine is medium intensity, ruby red with a slight violet undertone. Aromas of ripe red berries, dark stone fruits and black currants, with slightly peppery notes with lightly roasted coffee beans The taste is medium-bodied, dry and lively berry. Feel ripe dark wild berries, wild berries and ripe dark stone fruits. The medium length aftertaste is enhanced by a pleasant and velvety berry park. The berries come from the surroundings of the town of Carcassonne and are grown following the principles of sustainable farming, the wine is fermented in stainless steel barrels and does not develop in oak barrels.
