Offley Porto White is made using the traditional Porto wine method under the guidance of wine master Luid Sottomayor. The stems are removed from the hand-harvested grapes, pressed and the resulting juice is fermented together with the skins. At the right moment, fortified alcohol is added, resulting in a fortified wine. The winemaker chooses this right moment by strictly monitoring the temperature and density of fermentation, depending on the grape variety, the degree of ripeness and the final desired sweetness. Initially, the wines will remain in the Douro until next spring, then they will be transferred to V.N.Gaia and matured in Offley's century-old oak barrels according to the traditional Porto wine aging system. Over the years, the wines are carefully tasted by the winemaking team, who also make any necessary corrections and prepare the final blend to preserve the style and character of Offley Porto White. The selected wines are usually 2-5 years old. The final mixture is filtered and bottled. Straw yellow in color. The intense aroma is dominated by notes of flowers, apricots and peaches, marmalade, nuts and dried fruits. This is further enhanced by aging in oak barrels, increasing the richness and complexity of the wine. The taste has a balance between acidity and sweetness, with a delightful and elegant aftertaste.
