A young and small boutique winery founded in 1988 by Donald Patz, Heather Patz, Anne Moses and James Hall. Makes wines only from Chardonnay and Pinot Noir berry varieties selected from various small growing regions in Sonoma. Medium intensity garnet red in color. The aroma is medium intensity berry lively and slightly animalic. Ripe dark cherries, strawberries-raspberries, ripe field berries with sweet pastry spices can be felt. Incense smoke with cocoa is added to the end of the aroma. The taste is dry, fuller than average, berry silky. Feel dried red berries and dark stone fruits, dried black plums and balanced tannic spiciness. The aftertaste is long and berry spicy. The grapes come from four different vineyards. The berries are picked and selected by hand. 25% of the berries are pressed in whole bunches. The wine is fermented in open barrels with skins for 2-3 weeks. After fermentation, the wine is aged for 12-16 months in French oak barrels, clarified and bottled without pre-filtering.
