Santiago Ruiz is known as the “father” of Albariño. His family had been making wine since the late 19th century, but Ruiz devoted himself fully to wine after retiring at the age of 70. Ruiz was a passionate promoter of Galicia's local white varieties and introduced winemaking innovations such as refrigeration and stainless steel tanks to improve the quality of white wines. In addition, he was the first to put a label on white wine (1984). Santigo Ruiz became the first "ambassador" of the Rías Baixas region, introducing the region to the world and contributing to the rebirth of Galician vineyards.
