The winery was founded in 1825 by Don Domingo Perez Marin and was family owned until 2007, being the region's largest producer of Manzanilla sherry and PDO Manzanilla wine vinegar. Since 2007, the company has been owned by José Estévez The color is pale yellow with a greenish undertone The aroma is complexly citrusy and salty, with a slight note of oxidation, ripe apples, salted almonds and toasted bread. A little floral spiciness with dried fruits is added to the end of the aroma. The taste is slightly salty and roundly fruity, you can feel white currants, fresh citrus fruits and salted almonds. The aftertaste is long and bitterly fruity with a slightly salty finish. The grapes come from the Miraflores vineyard. The wine is fermented under "flor" yeast foam in large oak barrels and is developed together with the yeast for 3 years in large oak barrels.
