The winery is one of the oldest in Spain and its history dates back to 1264, when the knight Alonso Valdespino received land in Jerez from King Alfonso X of Spain as a token of gratitude for his military services and the liberation of the Jerez region from the Moors. Wine was made in 1430, and in the 19th century the winery was the official supplier of sherry to the royal houses of Sweden and Spain. The estate was owned by the Valdespino family until 1999, when Spanish entrepreneur José Estévez invested in the renovation of the winery. Blackish brown in color The aroma is full, syrupy fruity, with a light oaky note, you can smell dried figs, burnt blueberry jam, raisins, chocolate and cocoa. Dried orange peel is added to the end of the aroma. The taste is full of berries, you can feel overripe figs, sweet raisins, milk chocolate, cocoa and caramel. The aftertaste is long and raisiny, caramelized black plums are added. The grapes are dried into raisins before pressing, the wine is fermented in large oak barrels and matures for 8 years using the "solera" method in large oak barrels. "El candado" means padlock in Spanish, and the wine cork is locked on the bottle with a small padlock. This refers to the legend that the Valdespino family did not plan to sell this wine and wanted to keep it for themselves
